UO HOUSING HAS THE PERFECT RECIPE FOR HOMESICK STUDENTS

An entrée with Middle Eastern flavors and a vegetarian pastry are just a few of the dishes with a homemade flavor that diners at University of Oregon residence hall eateries will savor beginning next week. In an effort to spice up meal selections while adding the familiarity of home cooking, University Housing is working to make new students feel at home by bringing favorite family recipes from their home kitchens to their campus dining centers. This year, UO students and their families were asked to submit their favorite recipes to incorporate in dining hall menus. In just four weeks, more than 40 different recipes were turned in. "We have a database with hundreds of recipes, but we are always looking for something new, and something that the residents will really enjoy," says Tom Driscoll, University Housings new food services director. This weekend during the universitys Fall Family Weekend, Sara Olsher, a freshman from Salem, will enjoy her mother Susans "Easy Vege Squares" during brunch from 10 a.m.1:30 p.m. on Saturday, Oct. 21, at Carson Hall, 1450 E. 13th Ave. (University Housing will hold a photo shoot with Sara and her mothers creation at 4:30 p.m. on Friday, Oct. 20.) Lindsey Munce, a freshman from Mukilteo, Wash., will savor the flavor of her mother Karens unique recipe for Lebanese Chicken in a taste test and photo session at 4 p.m. on Monday, Oct. 23, also at Carson Hall. As more favorite family recipes are submitted, University Housing meal planners will continue to test them to see if they can be translated to serve the 3,000 people who eat at UO dining centers three times a day.
